75 g potatoes, cooked
125 g chocolate
25 g butter
450 g icing sugar
5 ml vanilla or caramel essence
Rub the potatoes through a sieve, or use a potato ricer.
Melt the chocolate and butter over warm water or in the microwave.
Add the potatoes to the chocolate mixture and leave to cool.
Add the essence to the cooled mixture.
Add the icing sugar and knead the mixture until it is smooth.
Press the mixture into a greased baking sheet (175 x 125 mm) and smooth it until it is even.
Place in the fridge for about 1 hour.
When the mixture is firm, slice into equal-sized cubes.
