Lamb & Tomato Hotpot

A delicious Hot Stew perfect for Cold Weather

Ingredients:

15 ml olive oil

600 g lean lamb cubes

15 ml flour

2 cloves garlic, crushed

5 ml turmeric

3 dill gherkins, cubed

2 onions, quartered

1 red pepper, cut into strips

2 tomatoes, quartered

250 ml tomato juice

60 ml tomato paste

15 ml white wine vinegar

Sea salt and freshly ground black pepper

Method:

Heat the oil in a heat-proof casserole, pot and cook the lamb until golden

Add the garlic, turmeric, dill gherkins, onions, red peppers, tomatoes, tomato juice, tomato paste and vinegar.

Cover and bake at 190 °C for about 45 minutes, or until tender.

Season and serve with delicious mashed potatoes or rice.
