Ingredients

For the Layers

  • Mixed leaves
  • Fresh, raw corn
  • Red kidney beans
  • Red cabbage
  • Cherry tomatoes
  • Sweet potato wedges (roasted in cumin seeds and cinnamon)
  • Beets (roasted in cumin seeds and cinnamon)
  • Cucumber chunks
  • Sundried tomatoes
  • Baby corn
  • Boiled eggs
  • Fresh basil

For the Dressing

  • Olive Oil
  • Fresh crushed garlic
  • Rosemary
  • Lemon juice
  • We also like to add the juices from the roasting pan so there are some lovely roasted cumin seeds to crunch on!

This is where you really get to have some fun showing your creative skills!

The whole family can get involved, each adding a layer of their favourite, healthy ingredients.

As always, we love to add some crispy roasted veg, an assortment of beans and other colourful, crunchy delights!

It’s best to keep the dressing separate for these jars so it stays crunchy and fresh.
