Frozen Lychee & Mint Cocktails

A mouthwatering summer cocktail to enjoy with your picnic on the beach!

Serves: 4

Ingredients:

400 g Tinned lychees

a small bunch of mint leaves

100 ml of vodka ( or lychee juice for a non-alcoholic version)

2 Limes, juice only

2 Handfuls of Ice

Method:

  • Drain the tinned syrup into a blender

 

  • Add 4 of the ltychees, the mint leaves, vodka ( or lychee juice) and lime juice

 

  • Add the ice and blend until it becomes slushy

 

  • Serve with a mint leaf and a lychee as garnish
